A1 Ghee Source: A1 Ghee or regular ghee is made from A1 Milk which generally comes from Western origin, such as Holstein and Jersey breeds of cows. This A1 milk contains A1 beta-casein protein, a compound linked to digestive issues and inflammation for some individuals.
A2 Ghee Source: The source of A2 Ghee is A2 Milk. And A2 Milk source is the indigenous breeds of cows of India and Africa. Some of the known breeds are Gir, Sahiwaal, Kankrej etc. A2 Milk contains A2 beta-casein protein, which is known to be easy to digest.

Difference between A2 Ghee Process and A1 Ghee Process
A1 Ghee Process: In today's date, most of the practices of producing A1 Ghee or Regular Ghee involve: Collection of A1 Milk, heating it for long time to achieve Cream (Malai), and lastly cooking the cream(malai) again for long time to derive Ghee.
A2 Ghee Process: A2 Ghee making process starts by collecting A2 milk from the cows/buffalos, then adding Culture (dahi ka jaawan) to it, to set the curd. The curd later on, is churned slowly with Wooden bilona (churners) to separate butter and buttermilk. This butter is rinsed with cold water, and later cooked slowly to derive pure A2 Ghee.
Now, why the process matters?
In today's time, most of A1 Ghee manufacturers use all machines and preservatives to improve the taste, production, and shelf life of the Ghee.
On the other hand, the Traditional Bilona process has been followed since centuries in India. The process has many benefits, and is known to preserve much of nutrients.
Hence, A2 Ghee - that is specifically made with Bilona-hand churning process, does not involve any use of machine, or preservatives/chemicals.
This is what makes A2 Bilona Ghee healthier compared to Regular Ghee or A1 Ghee.
